Wishing you a Merry Christmas and a successful year in 2015

This year, in the spirit of Christmas and this period of sweet indulgence, we’re treating you to Monoplan’s recipe for spiced “Pfeffertaler” biscuits. Monoplan wishes you a Merry Christmas and a good start to the year 2015!

Ingredients

100 g sultanas
2 tbsp. Kirsch brandy
75 g walnuts
75 g hazelnuts
50 g dark chocolate
Peel of 1 orange
3 tbsp. runny honey
3 egg yolks
Nutmeg
Ground pepper
1 pinch of salt
125 g plain flour

Preparation

Soak the sultanas in the Kirsch brandy and briefly allow to marinade.

Mix all of the ingredients together, apart from the flour. Add the flour and combine to form a dough.

Split the dough in two, and shape each one into a 25-cm-long sausage-like roll. Wrap each one in cling film and allow to chill in the freezer for 15–30 minutes.

Remove the cling film. Using a sharp knife, cut the rolls into discs (between 5 and 7 mm thick) and place on a greased baking tray.

Place in the middle of a pre-heated oven at 200 °C for 10–15 minutes until crisp.
